Game Day Sunday Dress

Did you watch the big game this past Sunday? Me and the Mr. are not a big football fans but when the Super Bowl comes on, we make it a thing. We complete all our errands, pick up a couple snacks from the grocery store and stay in. We do not go out to any Super Bowl parties. We just do our own thing.

In light of Super Bowl Sunday I usually will wear a dress to church in my favorite team colors. I did not have a color of either team in my closet. What I did have was a dress I purchased this past Fall off the clearance rack at TJMaxx.

This dress has been hanging in my closet for months because I did not know how or when to wear it. I wasn’t a big fan of it. The only reason I bought it was because it was only $2.00 and I didn't want to turn down such a bargain. (It's a girl thing).

My plan was to wait until spring and wear it for fun with my white Adidas tennis shoes, but for now, I took my chances with black tights and booties. The temperatures were in the 60's so the quarter length sleeves and nylon fabric felt nice. With the floral print and sports stripes on the neck line and sleeves, I thought it made the perfect dress to wear to church on Super Bowl Sunday.


After church we went out a little while then took a power walk around the neighborhood. Once we were settled in, we made burritos for dinner. While waiting on the game to start, I cooked up a batch of homemade granola. It was delicious eaten alone but would also be great as a topping to yogurt, ice cream or cereal.

Needless to say, I thought the game was rather boring and the commercials were not funny. I actually thought they were mostly ridiculous and my attention went to doing more crocheting.

Creamy Jalapeno Bites

While I was out shopping the other day, I found a new food. I'll admit, if it has the word "new" on the package, then I'm sold. I'm a sucker for "new things". My latest new find is this Philadelphia cream cheese with Jalapenos.

I love both cream cheese and jalapenos so I grabbed a small tub of this combination and just knew I could come up with some kind of snack with it.

I had an idea in my mind so I had to try it. I named them "Creamy Jalapeno Bites" because that's exactly what they are.

Take a can of crescent rolls and rolled them out onto a baking sheet. I cut each triangle in half and pressed them out so they would be thin and wide enough. The pieces were not any certain size or shape, I just wanted them big enough to pinch around a spoon of cream cheese spread.

Bake them according to directions on the crescent container, sprinkle with bacon and ..................

Wah lah. You have a delicious side item or finger snack. Perfect for super bowl parties, tailgates or showers. These little bites of hot and cheesy goo will sure be a crowd pleaser. They just got a big thumbs up in my house!

Roast Beef Dunkies

I'm fixing to share with you a mini version of the "French Dip Sandwich". We have always called them "Roast Beef Dunks". I guess because that better describes how I eat them.

I made these to eat for "sandwich night" I'm sure you all have those nights. Well, let me tell you, these little babies are D-licious! They are really simple and not bad on the calories either.
Each one is approximately 150 calories.

So, roll up your sleeves or even get your kids to do this. Its that easy.

Get a can (more) of croissant rolls.
Separate each one in there own little triangle shape.
Place a piece of deli roast beef on the bigger end of the triangle.
Place a 1/2 piece of provolone cheese on top of the beef.
Roll up the croissant from big end to small end and place on a greased cookie sheet.
Bake according to croissant instructions.
You will see the cheese bubble out of the ends. Don't worry, its gonna be good.

Dip in Au-jus gravy and enjoy.

You can find Au-jus dip in the grocery deli or soup mix isle.
Or for a quick fix, just use a can of beef broth or French onion soup. Both work just as well.

These will be perfect for parties or tail gates, but are best eaten while warm.
Refrigerate leftovers. They are almost better when reheated.

Super Bowl Commercial Recap

Hope everyone had a fun Super Bowl Sunday. I'm sure most of you enjoyed it with friends and family and lots of food. This year (like last year) It was just me and my husband sitting around in our lounge pants enjoying the super bowl from our den. I have been on a diet for a week now, so I didn't want to ruin it by making alot of snacks. So, we just got some Chinese takeout and snacked on some fruit during the game.

To be honest, we don't really care about football, but we enjoy watching the Superbowl. Something always happens to talk about. This year was the lights going out, and did you see that 109 yard touchdown? Then the halftime show. Its always the halftime show. Beyonce was good but I don't think she out did Madonna's last years performance . And personally, I think the outfits for this performance get smaller every year and the dances get less modest. Perhaps there will be pole dancing next year. Ya never know.

What I like best of all are the commercials. Here is a recap of some of my favorite ones this year.

I also kind of liked the Taco Bell commercial with the old people but It doesn't really sell me on eating there. I thought alot of the commercials were good but alot were distasteful.

Buffalo Chicken Taquitos

When I think about cream cheese, hot sauce and spices, my tongue tickles. I love all three things and when they are put together, you have Buffalo chicken sauce.

After a nice afternoon walk with my husband, I decided to make dinner. I have been wanting to try making this hot cheesy dish. I mean, after all, he does the cooking all week so I let him rest and had my way in the kitchen.

Buffalo Chicken Taquitos is what I'm talking about!

Follow along and I'll show you how I did it.
First, go ahead and preheat your oven to 425 degrees

I had to cook my chicken. I suppose you could boil it, bake it or even buy it in a can. I cooked mine up with some butter. Just something about can chicken that doesn't interest me.

While my chicken cooked, I made the Buffalo sauce. Which consist of  2 Tbs. butter, 1tsp Mrs. Dash, 1 tsp garlic powder, 1/4 tsp Cajun seasoning, and 4oz. cream cheese.
Once those items are melted and creamed together, throw in 1/3 cup of Louisiana hot sauce, 1/3 cup milk, and simmer for 3 or 4 minutes.

While the sauce simmered, I chopped up my chicken and returned it to my (nonstick) pan.
If your using a skillet, you can just chop away right in the pan. I just didn't want to ruin mine like I have so many others.

Once you have it chopped up, add the sauce and mix it up. On a greased cookie sheet, place a couple spoons full into soft taco tortillas , sprinkle Mozzarella cheese on it and roll it up tight.
I cut mine in half so it would look like more but that was not necessary. It made plenty! Enough for a party lets say.

Now bake for 15 or 20 minutes, turning them over half way through.

I added some Edamame, and called it a meal! They were delicious!
These are great dipped in blue cheese or ranch dressing.
"I'm thinking this would be a hit at a Superbowl party".

Crochet Frenzie

I have just been on this little crochet frenzy lately. Really, I do it every night! I'm not complaining though. I'm having a good time with it and I amaze myself once I get something completed. I hold it in the air, give it a turn, smile a little, look over at my husband and with a little giggle I say, "look what I did".

It all started last year when I made little baby booties and sold them on EBay. Then I was introduced to Etsy where you make and sale homemade items. I have been a member on Etsy for a while but just recently opened my own Etsy shop. I just took a wild shot in the dark that anyone would want to buy any of my items. But I have had a couple sales and this tickles me. I named my shop "LiLiDi's". Why? Well, LiLi is what my siblings called me when they were little before they could say my name and then my father-in- law started calling me that because it is also one of my screen names. And Di is the first two letters of my middle and last name. I thought it all went together nicely and its easy for me to remember. You can find my shop HERE.

Recently one of my crochet baby hats was noticed by a local photographer in town called Encaptured & Co.. that wanted to buy it for a photo prop and since then, shes kept me pretty busy asking me to make items to use in photo shoots of little babies and even animals. She gives me some ideas and I go with it. You can see some of her work HERE. I am also making some items for my friends.

They do great shots and have great prices. Encaptured and Co. will let you choose your interest and they make it memories.

Here are a few other items I made for Photo props along the way.

I have another crochet prop that I made and hope to post later, but for now, I choose not to show it and keep it a surprise until the photographer uses it. I'm hoping it will work out.

Nearing touchdown

I am a fan of UNC Charlotte 49ers. I guess because my Daughter and other family members have gone there and that's a good enough excuse for right now. But It will not be long until they will be starting there first football team in the year 2013.

The football stadium will start out with 15,300 seats with the ability to expand to 40,000. You can tell the new team is on its way when you see not only the tuition prices going up, but you see more fan memorabilia in the stores around the area.

Just the other day I found these cute "Niner Nuts" sitting on the counter right next to the others cans for UNC (#1), NC State, and Wake Forest. I hope eventually they will be right up there with the big boys and I will have a new team to cheer for.
The next thing I did was sent a can of these to our friends that live in New Jersey. There daughter also goes to UNCC and is my daughters best friend and former roommate. I think they will get a laugh out it.
 Now what did I do with my Carolina cup?
