Cookie Dough Energy Bites

I am not a cookie dough eater. Home made cookies have egg in them so when I think of cookie dough (or any dough), I think of raw eggs. No thank you.
We used to lick the beaters when mom would make a cake but that was from the homemade frosting. Yum yum, that brings back some memories.

Now days you can find “eatable” cookie dough in tubs at the grocery store. I assume there are no raw egg in this type. I have never had intentions of trying it but I know a lot of people that love cookie dough. There is even cookie dough flavored ice cream, yogurts, and cereals. 

If you like cookie dough, you are going to love this recipe I’m going to share with you. This cookie dough is made with only 4 ingredients and no eggs included.  

I am always looking for a small finger tip snack and this is perfect and so easy to make. 


Cookie Dough Energy Bites

1 Cup- Almond Flour (or coconut flour).
2/3 Cup- Peanut Butter.
2 Tablespoons Honey. 
1 Tsp. Vanilla (optional).
1/4 Cup- Chocolate Chips ( minis are best).

Mix peanut butter, honey and vanilla until smooth.
Add Almond flour and mix/kneed until combined.
Add chocolate chips and mix until combined.
Roll into 1 inch balls.
Store in airtight container in fridge. 



Beware: It’s easy to eat too many of these. Each ball only has about 3 grams of protein and a little over 100 calories each, so take it easy if your trying to drop a few pounds. In fact, you may need to hide them from yourself. After one bite, you will get the urge to eat a few more. 

Cookie dough lovers, I guess you can just keep it in a bowl and eat it with a spoon. 


Halloween Snack Ideas

Halloween is only three days away and you need to come up with some spooky snack ideas for the little monsters in the house or the goblins that are coming over to visit. If you are crunched for time or don’t have any idea what to make, don’t get your bandages in a wad. I have three simple ideas your can do that are not only delicious but healthy too!

MUMMY PRETZEL STICKS
Chocolate dipped pretzels are always my quick “go to” treat to hand out to the kids. They are easy to make and have several possibilities for any occasion. 
They started out as ghost but then my daughter added more detail and they became mummies. 


-Large Pretzel Rods
-Chocolate Bark.
Melt the chocolate in a glass microwave safe bowl in 30 second increments until melted and smooth.
Dip pretzels into the chocolate and place on wax paper until dried.
Use melted dark chocolate or morsels for the eyes.

APPLE FALSE TEETH
My daughter wanted to make these when she came over. While I dipped pretzels, she made apple false teeth.
She giggled every time she completed one. Each one came out different and had its own personality. We had some good laughs with these and had fun eating them. They were delicious too!


-Red Apples
-Peanut Butter
-Mini Marshmallows 
Slice apples into wedges and remove any core.
Spread each wedge with peanut butter.
Line one wedge with mini marshmallows and place another wedge on top.

CLIO SNACK MONSTERS
Clio snacks are chocolate covered Greek yogurt bars that come in a variety of flavors. They now come in “mini” size and are the perfect treat to hand out at parties or showers. They can be left out at room temperature for four hours if they have to. They are also good frozen. They are healthy and taste just like little cheese cakes. So you will love these even if you are not a yogurt fan. 


-Clio Snack Minis
-White Chocolate Bark (they are already covered in dark chocolate).

Hint: Use food coloring to color the melted white chocolate to make different color monsters and decorate to your preference.

Peanut Butter Smoothie Bowl

I have been on the Nutrisystem diet now for over 4 years. I have successfully lost 50 lbs in the first seven months. I have maintained my weight loss ever since. I still eat Nutrisystem as I like the food and its convenience but I eat a lot more meals of my own.

Today I would like to share with you this delicious Smoothie bowl I made using the Nutrisystem Fresh Start probiotic shake mix. I am not a fan of drinking my meals. I have had a canister of this shake mix in the pantry for a while, but when I learned you can make a smoothie a little thicker and add them to a bowl, I was in. 



Peanut Butter Smoothie Bowl
288 calories- 19 grams of protein.

2 scoops of Nutrisystem Shake mix (or any other protein shake mix).
1 Tablespoon Peanut Butter.
1/2 frozen Banana.
1/2 Cup crushed Ice.
1/2 Cup water (or almond milk).

Add to Mixer and blend till smooth.

Top with your favorite toppings. 
I used 1 Tablespoon of grated chocolate and 1 tablespoon of mixed seeds and nuts. 

For the past few weeks, I have been experimenting with new tastes by putting away the muffins and waffles and making more yogurt and smoothie bowls. I am learning to like plain yogurt and adding in more fruits and veggies to my diet. In fact, I plan to start doing a short blog post every Friday to share my bowl creations and other healthy food choices. I’m hoping this will help me stick with clean eating and also help others that are thinking about eating better. I have some really good ones to show you, so stay tuned.

Home Made Sherbet

It has been hot here in the Carolina's. This mean lots of cold treats. Like sherbet for example.
I admit I'm more of an Ice Cream eater over sherbet. My husband on the other hand, prefers sherbet.

My favorite sherbet flavor is Orange. I remember many years ago back in elementary school, they had an ice cream cart visit each room once a week. The kids would line up to purchase their favorite ice cream. I loved the Orange Push ups. I also like the Nutty Buddies, but there was just something refreshing about the sweet orange creamy sherbet.

Yesterday I thought I was going to have to have a tooth extraction and would want something cold to eat so I pulled out a bag of mixed berries and made my own sherbet to enjoy for my late night snack.
I ended up not needing an extraction but I still have a delicious snack.

It was so easy to make....

Just kidding, I had a mess with no end as I had berries everywhere. My blender was not strong enough to mix the frozen berries so I moved them to the food processor and that didn't work either. I then found a more powerful blender that I had stored away and it worked. Wheeew. I had a mess and three appliances to clean up.

So, if you have a powerful blender, this sherbet is easy to make.


Home Made Berry Sherbet

1 bag frozen of mixed berries (approx 2 1/2 cups).
2 tsp fresh lemon juice.
2 Tbs honey
3 Tbs warm water as needed to mix. 

Place all ingredients in high speed mixer.
Pulse until smooth and creamy.
ENJOY.

I enjoyed my sherbet in a waffle bowl. As it melted, it coated the bowl with sweetness. 



Game Day Sunday Dress

Did you watch the big game this past Sunday? Me and the Mr. are not a big football fans but when the Super Bowl comes on, we make it a thing. We complete all our errands, pick up a couple snacks from the grocery store and stay in. We do not go out to any Super Bowl parties. We just do our own thing.

In light of Super Bowl Sunday I usually will wear a dress to church in my favorite team colors. I did not have a color of either team in my closet. What I did have was a dress I purchased this past Fall off the clearance rack at TJMaxx.

 so today your getting cheesy mirror selfies after a long days work!)


This dress has been hanging in my closet for months because I did not know how or when to wear it. I wasn’t a big fan of it. The only reason I bought it was because it was only $2.00 and I didn't want to turn down such a bargain. (It's a girl thing).

My plan was to wait until spring and wear it for fun with my white Adidas tennis shoes, but for now, I took my chances with black tights and booties. The temperatures were in the 60's so the quarter length sleeves and nylon fabric felt nice. With the floral print and sports stripes on the neck line and sleeves, I thought it made the perfect dress to wear to church on Super Bowl Sunday.

  

After church we went out a little while then took a power walk around the neighborhood. Once we were settled in, we made burritos for dinner. While waiting on the game to start, I cooked up a batch of homemade granola. It was delicious eaten alone but would also be great as a topping to yogurt, ice cream or cereal.


Needless to say, I thought the game was rather boring and the commercials were not funny. I actually thought they were mostly ridiculous and my attention went to doing more crocheting.

Clio Snack bars

I have found a love for yogurt. But not just any yogurt. I found these little Greek yogurt bars by Clio at my local Walmart. It was love at first bite. They taste like little cheese cakes, I kid you not!

I am not a fan of yogurt and I struggle to find a yogurt I will eat. You may ask, "why eat yogurt anyways? Well, I know that yogurt is a good source of calcium, protein and probiotics. Our bodies need these things. Yogurt is a healthy snack. I mean, we all need yogurt in our diet. It can be used as an alternative in a lot of recipes too.


As I am still on the Nutrisystem diet, these yogurts fit right in as my recommended morning or afternoon snack while still staying on plan. They are 140 calories and have 8 grams for protein.
These bars are also gluten free.

You will love Clio Greek yogurt bars. You do not need a spoon, oh no. Just use your fingers. These little yogurt bars are small but do not let that fool ya on the flavor or satisfaction. Clio yogurt bars come in a variety of flavors and plan to ad some new flavors in the future. It takes a while to perfect the flavor for each bar.


Dipped in a rich dark chocolate, they will satisfy your sweet tooth.
It's a win all the way around. I purchase a week supply at a time. I could honestly eat these for 3 meals a day.
