Jail House Burrito

Quick go grab your college student. They are gonna love this one.

By hearing some guys talk (and not by experience}, I learned this really cool thing to make with Ramen noodles. They were calling it a jail house burrito, but you can just call it a Ramen noodle burrito if it sound better to ya.
I got a little nosey and asked them what exactly it was and how do you make it.
I have made them a couple times. I was in the mood for one today, so I thought I'd show all by blogger friends how. ........Stay with me,  Its easier than it looks.

Here is how you do it.

1.- Get a pack of those 10 cent Ramen noodles of any brand and any flavor.

2.- Before you open them, crush them up really good by using your hand, rolling pin, glass, etc. I used a glass.

3.- Add the seasoning packet

4.- Add water (cold or warm) enough to cover the crushed noodles.

5.- Gently mix the seasoning in by working it with your hand or easily shake it.

6.- Hold the top closed and drain the water.

7.- Now work all the noodles to the bottom and roll. Let the remaining water squeeze out in the process. This gets messy at this point but it will be worth it.

8. After you have a nice tight roll, wrap in a dish cloth, or paper towel to hold it secure.

9.- Cook in microwave for 1 minute.

10.- Leave it wrapped and let it sit on the counter for 5 minutes. Then unwrap it, remove the package paper and its ready to eat.

If you try this, leave me a comment and let me know how you liked it and any variations you may have used.
ENJOY!

Far-Sight 20/20

I had a wonderful Valentines Day with only one minor interruption. Well, two if you want to count work. After work I had an appointment to have my eyes examined. This was not my first time (even though its been ten years). I knew I would need a driver. My husband was more than happy to take me. The exam took an hour and for that whole hour I sat behind some big eye machine answering to either "1 or 2, 2 or 3, 3 or 4"....you get what I'm talking about.

Then the doctor dilates my eye balls and we go through the whole thing again.
The result are in, I am far-sighted, have astigmatism and presbyopia. In other words, I'm getting old and I need reading glasses, but I can see perfectly fine from far away.

Here I am being silly and embarrasing my husband with diposable sunglasses.

After my appointment, my sweet husband surprised me by taking me to Logan's Roadhouse for dinner. I really needed this. I got me a big sour apple Logan's tea and a small steak with potato and salad. It hit the spot. It was pretty funny because my eyes were blurry and could not see good. My husband had fun with that by taking pictures of me with his cell phone and sending them to my daughter. He said he was even making funny faces at me and I did not even notice. Every one walking around me looked like ghost figures but I had no problem eating my dinner. I think I played if off pretty good. After about 2 hours, I was fine. We headed back home to complete our Valentines evening. Oh and did I mention, He did get me candy after all. "Jelly Bellys". I love those things.
