Pecan Pie In A Mug

I am not a big “pie” person. I’d rather have cake but if I do eat pie, it’s gonna be pecan. That is my absolute favorite. I like the regular old fashion kind. Some people make chocolate pecan pie which is good but the original is still better. 

Cheese cake is my 2nd favorite kind of pie. And yes, I consider cheese cake a pie. It has a crust bottom and eaten like pie. SO, it’s pie. 

The other day I was craving something sweet and realized I had all the ingredients to make a pecan pie but did not want to make a whole pie. That’s when I went on a search for a single serve size. 



This recipe calls for honey instead of Karo Syrup but it did not disappoint. It was delicious and only a couple minutes to throw together and cooked in the microwave. It don’t get any easier than that.

I used to love to eat those little Bama brand pecan pies from the convenient stores. I still do but I try not to give in. 
Momma made pecan pies for Thanksgiving and I’m sure there will be one on the table at Christmas. She makes the best.

Air Fryer S’mores Oatmeal

For the past two weeks, I have been doing a smoothie for breakfast. I’m getting tired of it. I like to eat my food, not drink it but I am always looking for healthy meal options. I have also been taking my lunches to work instead of coming home for lunch and pigging out. I have to limit my meals. Portion control is what I have to do if I want to lose weight. It’s not as much about what you eat but how much you eat. 

This morning I wanted to make a solid breakfast for a change. I started making an egg but ended up burning it. I guess I was out of sync. I used to always make an egg. I consider myself an omelet pro and I love my eggs over easy too. We grew up calling it “an egg with a moon on it” Only momma knew what we meant. 

So, since my egg didn’t turn out well, I resorted to a recipe I found for S'mores Oatmeal. I’m not a big fan of s’mores but this was a winner. It was like eating a dessert instead of breakfast. This is still considered “healthy”, It’s easy and can be made in your air fryer within 7 minutes. 



AIR FRYER S’MORES OATMEAL
1/3 Cup Quick Oats
1/2 Scoop Vanilla Protein Powder
1/4 Teaspoon Baking Powder
1/3 Cup Almond Milk
1/2 Sheet crushed Graham Cracker
Chocolate Chips
1/4 Cup Mini Marshmallows

Mix together, oats, protein powder, baking powder and Almond milk.
Pour into a Ramekin.
Stir in a few of the chocolate chips and marshmallows.
Top with crushed graham crackers, and the rest of the chocolate chips and marshmallows. 
Cook in air fryer at 350 degrees for 7 minutes. 
SPECIAL NOTE: Mash your marshmallows down a little so they do not fly around in the air fryer. 


After I ate breakfast, I went outside and ran/walked 3 miles. So I guess I can say this breakfast wasn’t heavy. But the 20lbs I have put on this year sure was.

Air Fryer Popover

I have been wanting to make home made popovers. A popover is a light roll made from an egg batter similar to Yorkshire pudding. While they seem large and fluffy, the insides come out somewhat hollow in the middle. 
I found several recipes that are super easy but there is one problem. To make real popovers, I would have to purchase a special popover pan. It looks similar to a muffin pan but are specially made with chambers that air can flow around them causing the dough to puff and, well, “pop over” the pan. 
 


I was determined to try making popovers but I knew I did not have a special pan nor did I need a dozen of them in my diet. So....
I made my own recipe to create just one popover by using my air fryer. I did not want to heat the oven up for a single serving and besides, I love my air fryer. 



I think it turned out great and made a delicious portion controlled breakfast that kept me full until lunch time. It did not include any sugar until I decided to sprinkle powdered sugar on top. This one reminded me more of a dutch baby pancake but I’m just happy that it tasted so good, and let’s face it, It did “pop over” in it’s own little way. 


I plan to get one of those popover pans soon. Well, soon as I can find one I can afford. 

Air Fryer Popover (single serve)
1/4 Cup- all purpose flour
Pinch of salt
1/4 Cup- milk (I used almond milk)
1 Large egg

Mix flour and salt together.
Whisk milk and egg together.
Pour egg mixture into the flour mixture.
Mix until blended but do not over mix.
Pour into a buttered ramekin or mug.
Add a few berries for some sweetness (optional)
Bake in air fryer at 350 for 15 minutes. 

Top with powered sugar or syrup for a sweet treat.

Air Fryer Cobbler For One

Have I told you how much I love my air fryer? Of course I have. Like, only million times! When I received my air fryer for my birthday last year, I have used more than my oven! You can literally cook anything in this thing that you can in an oven and in half the time.

As I was eating breakfast, I got to thinking about all the ways to use my air fryer. Yes, I might be a little obsessed. 
Then I got to thinking about moms cobbler. I make moms cobbler every year at my New Years dinner and it’s always a crowd pleaser. It is so easy and only calls for a cup of this and a cup of that (that's what my mom says every time I ask for a recipe). 

I started craving some cobbler but did not want to make a whole one. So I decided to try making a single serve by breaking down the ingredients to fit in a cup. In 15 minutes I had a tiny tasty mouth watering blueberry cobbler. 


So if you have an air fryer an oven proof dish like a ramekin, then I am sharing the recipe with you. I will also tell you at the end how to make the *regular size one in the oven for those that do not have an air fryer. Now, grab an apron and lets get going....Just kidding, you will have this made before you can even tie an apron.


Single Serve Air Fryer Cobbler
Turn on the air fryer at 350 degrees and set timer for 17 mins (that's 2 minutes to preheat, 15 minutes to cook).
  • 2 Tablespoons butter.
  • 1/4 cup self rising flour.
  • 1/4 cup sugar.
  • 1/4 cup milk.
  • 1/4 cup fruit.
-Melt butter and ad to a bowl, mug or ramekin.
-In separate bowl mix flour, sugar and milk.
-Pour mixed batter into the butter (do not stir into the butter).
-Add fruit (again, do not stir).
-Place ramekin in Air Fryer and bake for 15 minutes. (If you do not think it’s done enough, just bake for another 3 minutes.)


Caution: Will be hot.
Top with ice cream (optional).

*For the regular size cobbler.
Make the same way but with one stick of butter and 1 cup of everything else instead of 1/4.
Put in a 2 quart casserole dish and bake at 325 in oven for 1 hour.
