Happy St. Patricks Day! 

Is everyone getting their Irish on?


I think it’s fun to celebrate St. Patricks day. We usually take our first beach trip this time of year. 
Unfortunately, I have a job that only allows me one week off this year. We hope to squeeze in a few weekend trips. 

I started my day off with a bowl of Lucky Charms. This is my favorite cereal. I could honestly eat the whole box. 


Just kidding here. I only bought a single serve cup of Lucky Charms. 

I made green Rice Krispy treats to share with the office. 
And I will be wearing my green sweater.


For lunch, the Boss is taking us three girls an upscale restaurant in town. 
It is in celebration of goals met in the office. 

My daughter is coming home today and we will be having our traditional St. Patricks Day dinner of corned beef brisket and cabbage. 
The brisket will cook in the crockpot all day. 
My house will be smelling good in a few hours.

Hope everyone had a nice St. Patricks Day.


In the wake of the Corona virus pandemic, they announced for North Carolinians to stay in and not go any place where there are groups of more than 10 people. 
All resteraunts have closed their doors for dining. They are keeping drive thrus open and you can call in orders for pick up.
Stores are now closing their doors to shoppers and are asking everyone to shop online and pick up at the stores. This all seems so weird. 

The weather was cool and misty during Most of the day. I was feeling bored, so I decided to make the best of St. Patricks Day by baking some green sugar cookies. 


They were delicious and were prefect for an afternoon snack. 

My house was smelling great as the aroma of the Corned beef brisket was drifting from the crock pot. It had to slow cook for 8 hours. We sat down to enjoy our traditional St. Patricks Day meal with corned beef and cabbage. I made a side of horseradish sauce for dipping. 


My daughter will usually come and enjoy St. Patricks Day dinner with us but with everything going on, we didn’t decide to cook until the last minute and she had forgotten it was even St. Patricks Day. We also hated to call her home in the chaos. We will be seeing her on Thursday as we go help her get moved into her new apartment. We are taking her some cookies. 

Guess who else was in the St. Patricks Day mood and put on their green coat?
Loui!

Loui is a lizard that lives in my shutters. He comes out for a chat when the temperatures are above 50. He will even let me pet him. He has been dark skinned all month until today. He decided to turn into a leprechaun.


Funny story: I walked out the other day and said “hey Loui” and three more lizards popped out of the shutters. Now I do not know which one is the real Loui and neither do they. Haha. 

Clovers

I’m trying to get my thoughts together so I can be ready to celebrate St.Patricks Day. This is when we usually take our first beach trip of the season but with all the rain we have been having, we decided to wait a week.

I had my nails painted green for St.Patricks Day and now Im looking for a green shirt. This is the only time of the year you will see me wearing green. For some reason, when I wear green, I am grumpy and hateful all day. I just do not know what it is that does that. I can wear an olive or army green and I’m fine but I have to avoid the greeny greens. 

March is when we see most of the weeds taking over the yard letting us know its time to start the lawn mowing. 


Speaking of weeds, our yard is full of clovers. This brings back memories of when I was young. All the girl friends would sit for hours combing through clover patches trying to find a four leaf clover. If we were lucky we would find a few. The odd to finding one is 10,000 to 1. 


It was always fun. Even now, when we go out for a walk, sometimes I get left behind while I squat down to a patch of big fat clovers. I have not had much luck latley finding one. I read over at Andreas blog that her grandmother left behind 238 four leaf clovers she had found during her life. 133 of those were found pressed in her Bible. Isn't that just the sweetest thing? I made some green eggs and ham muffins this morning for breakfast and will have my traditional bowl of Lucky Charms Cereal on St. Patricks Morning. 
For the muffins, I place deli ham inside muffin cups, filled with egg and cheese and baked for 20 minutes. The topping is smashed avocado. This was so delicious. Each cup is about 80 calories and has 9 grams of protein. 


My daughter and her boyfriend will be coming over for dinner on Sunday. We will be having Cornbeef Brisket, Cabbage Steaks and Taters. I still have to decide on a little dessert. I may just pick up some cupcakes from a deli.
